One-Pan Crispy Chicken Thighs & Potatoes (Easy Dinner)
This is one of the best one-pan meals you can make — everything cooks together, the chicken juices flavor the potatoes, and cleanup is minimal.
Ingredients (3–4 servings)

4–6 bone-in, skin-on chicken thighs
-
1½ lb potatoes (cut into chunks)

1 onion (sliced)
-
2 carrots or bell peppers (optional)
-
2½ tbsp beef tallow (melted)
-
1½ tsp salt
-
1 tsp black pepper
-
1 tsp paprika
-
1 tsp garlic powder
-
½ tsp onion powder
-
½ tsp thyme or Italian seasoning

Optional: lemon wedges
Step 1 — Prep oven
Preheat oven to 425°F (220°C).
High heat = crispy chicken + roasted vegetables.
Step 2 — Season vegetables

Toss potatoes and veggies with:

1 tbsp beef tallow
-
half the salt & spices
-

Spread on sheet pan.
Step 3 — Season chicken

Pat thighs dry.
-
Rub with remaining beef tallow.

Add remaining seasoning.

Place chicken skin-side up on top of vegetables.
Step 4 — Roast
Bake 40–45 minutes until:

Chicken skin is deep golden
-
Potatoes crispy on edges
-
Chicken reaches 175–185°F
Step 5 — Finish
Squeeze lemon over everything (optional but amazing).
Rest 5 minutes and serve.
