Ingredients (3 servings)

1½–2 lb boneless chicken thighs

1½ tbsp beef tallow

3 garlic cloves (minced)

Juice of 1 orange
-
Juice of ½ lemon
-
1½ tsp salt
-
1 tsp black pepper
-
1 tsp paprika
-
½ tsp oregano
-
1 tsp honey (optional but great)
Step 1 — Dry & season

Pat chicken dry.

Season both sides with salt, pepper, paprika, oregano.
Dry chicken = better browning.
Step 2 — Hard sear (MOST IMPORTANT)

Heat skillet medium-high.

Add beef tallow.

Place chicken smooth-side down.

Do NOT move for 4–5 minutes.
This creates deep golden crust.
Step 3 — Flip & finish

Flip chicken.

Lower heat to medium.

Cook 4–5 more minutes.
Step 4 — Citrus garlic sauce

Push chicken slightly aside.

Add garlic for 20 seconds.

Pour in orange + lemon juice and honey.

Spoon sauce over chicken for 1–2 minutes until glossy.
Step 5 — Rest
Remove from heat and rest 3–5 minutes.
