Chicken Gizzards
The secret is braise first, then fry or sauté.


 Ingredients (Serves 4)

  • 2 lbs chicken gizzards

  • 1 tbsp beef tallow or butter

  • 1 onion (sliced)

  • 4 garlic cloves (minced)

  • 2 cups chicken broth

  • 2 tbsp soy sauce (or 1½ tsp salt)

  • 1 tsp paprika

  • ½ tsp black pepper

  • ½ tsp thyme

  • ½ tsp onion powder

  • 1 bay leaf (optional)


Step 1: Make Them SUPER Tender

  1. Add gizzards and broth to a pot.

  2. Bring to a boil, then lower heat.

  3. Simmer 50–60 minutes (until fork-tender).

Don’t skip this — it transforms texture.

Fast method: pressure cooker 25 minutes.


 Step 2: Build Flavor

  1. Drain gizzards (save a little broth).

  2. Heat oil or butter in skillet.

  3. Cook onions until soft and golden.

  4. Add garlic and spices.

  5. Add gizzards and sauté 8–10 minutes.

Let them brown slightly — this creates deep flavor.


 Step 3: Make the Sauce (Best Part)

  1. Add ½ cup reserved broth.

  2. Simmer 5–8 minutes until thick and glossy.

Optional upgrade:

  • Add 1 tbsp butter at the end for richness.


 Serve With

  • White rice

  • Mashed potatoes

  • Grits

  • Bread for dipping
