Our Favorite Recipe:

Chicken Drumstick Recipe (Crispy Outside, Juicy Inside)

This is the most reliable, crowd-favorite drumstick method — simple seasoning, high heat, and beef tallow for deep flavor and crispy skin without frying.


Ingredients (8–10 drumsticks)

  • 2–2½ lb chicken drumsticks

  • 2 tbsp beef tallow (melted or soft)

  • 1½ tsp salt

  • 1 tsp black pepper

  • 1 tsp paprika

  • 1 tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp baking powder ⭐ (secret for crispiness)

  • Optional: pinch cayenne or chili powder


Step 1 — Dry the chicken (VERY important)

  1. Pat drumsticks completely dry with paper towels.

  2. Moisture = soft skin, so dry well.


Step 2 — Season

  1. Toss drumsticks with beef tallow.

  2. Mix spices + baking powder together.

  3. Coat chicken evenly.

👉 Baking powder helps skin blister and crisp (doesn’t affect taste).


Step 3 — Roast HOT

  1. Preheat oven to 425°F (220°C).

  2. Place drumsticks on rack or sheet pan, spaced apart.

  3. Bake 40–45 minutes, turning once halfway.


Done when

  • Skin deep golden and crispy

  • Internal temp 175–185°F (dark meat is best higher)


Step 4 — Rest

Let rest 5 minutes before serving.
