Our Favorite Recipe
Classic Burger
Ingredients

1 lb patties
-
1–2 tbsp beef tallow
-
1 tsp kosher salt
-
½ tsp black pepper
-
Optional: pinch garlic powder
How to Make Perfect Patties
Make a thumb dent
Press a small indentation in the center.
This prevents the burger from puffing up while cooking.
Season right before cooking
Salt and pepper both sides just before they hit the pan.
(Salting early pulls moisture out.)
Heat the tallow

Cast iron pan, medium-high heat.

Add beef tallow and let it shimmer.
Cook (don’t move!)
Place patties down and leave them alone:

3–4 minutes first side → crust forms

Flip once
-
3–4 minutes second side
Add cheese during last minute if using.
Doneness Guide

Medium-rare: ~130–135°F
-
Medium: ~140–145°F
-
Medium-well: ~150°F+
Pro Burger Secrets

Don’t press the burger while cooking (juices escape).

High heat = steakhouse crust.

Rest burgers 2 minutes before serving.

Brioche or potato buns toast beautifully in leftover tallow.
