Our Favorite Recipe:
Crispy Beef Tallow Chicken Breast with Wing
Ingredients (2 pieces)

2 split chicken breasts (with wing attached)

2 tbsp beef tallow (softened or melted)
-
1½ tsp salt
-
1 tsp black pepper
-
1 tsp paprika
-
1 tsp garlic powder
-
½ tsp onion powder
-
½ tsp dried thyme or rosemary
-
Optional: squeeze of lemon
Step 1 — Dry brine (secret to juicy meat)

Pat chicken completely dry.

Sprinkle salt all over, including under skin.

Refrigerate uncovered 1–12 hours.
This makes the skin crisp and seasons the meat deeply.
Step 2 — Season

Rub beef tallow over entire chicken.

Gently lift skin and rub a little underneath.

Add remaining spices evenly.
Step 3 — Roast (best method)

Preheat oven to 425°F (220°C).

Place chicken skin-side up on rack or baking sheet.

Roast 35–45 minutes until:

Skin is deep golden
-
Internal temp reaches 165°F near bone
No flipping needed.
Step 4 — Rest
Rest 5–10 minutes before eating.
Pro chef tricks
**Start hot — this renders fat and crisps skin
** Don’t cover or crowd pan
** If skin needs extra crisp: broil 2–3 minutes at end
