Cheesemaking is as old as the dawn of domesticated cattle, long serving as a way to transform highly perishable milk into a nutrient-dense, storable food. Over the past 75 years, however, most supermarket cheeses have drifted far from their artisan roots, the result of an industry that prioritizes standardization over craftsmanship.
Fortunately, a handful of small-scale cheesemakers continue to preserve the traditions and flavors of true artisan cheese. Lykens Valley Creamery in Millersburg, Pennsylvania, is among these rare stewards of the craft. This certified organic, on-farm creamery produces raw milk cheeses using milk from their own all-grass, A2A2 dairy herd—yielding exceptional cheeses that echo the quality and character of generations past.
