 Ultimate Juicy Chicken Breast (Beef Tallow Method)

Ingredients (2 servings)

  • 2 large chicken breasts

  • 1½ tbsp beef tallow

  • 1 tsp kosher salt

  • ½ tsp black pepper

  • 1 tsp garlic powder

  • 1 tsp paprika

  • ½ tsp onion powder

  • 1 tsp lemon juice (optional but recommended)

  • Fresh thyme or rosemary (optional)

 Step 1 — The SECRET (Dry Brine)

  1. Sprinkle salt evenly over chicken.

  2. Place uncovered in fridge 30–60 minutes (or overnight).

 This pulls moisture in and makes the meat naturally juicy.


Step 2 — Season & Prep

  1. Pat chicken dry.

  2. Rub with melted beef tallow.

  3. Add remaining spices.


Step 3 — Perfect Cooking Method

  1. Heat skillet on medium-high until hot.

  2. Add a small spoon of tallow.

  3. Lay chicken down — don’t move it.

  4. Cook 5–6 minutes until deep golden crust forms.

  5. Flip once.

  6. Lower heat to medium-low.

  7. Add herbs (optional) and spoon melted fat over chicken for 2–4 minutes.

Cook until internal temp reaches 160–165°F.


Step 4 — REST (Most Important)

Let rest 5–7 minutes before cutting.

This step alone can double juiciness.
