Ultimate Juicy Chicken Breast (Beef Tallow Method)
Ingredients (2 servings)

2 large chicken breasts
-
1½ tbsp beef tallow
-
1 tsp kosher salt
-
½ tsp black pepper
-
1 tsp garlic powder
-
1 tsp paprika
-
½ tsp onion powder
-
1 tsp lemon juice (optional but recommended)

Fresh thyme or rosemary (optional)
Step 1 — The SECRET (Dry Brine)

Sprinkle salt evenly over chicken.

Place uncovered in fridge 30–60 minutes (or overnight).
This pulls moisture in and makes the meat naturally juicy.
Step 2 — Season & Prep

Pat chicken dry.

Rub with melted beef tallow.

Add remaining spices.
Step 3 — Perfect Cooking Method

Heat skillet on medium-high until hot.

Add a small spoon of tallow.

Lay chicken down — don’t move it.

Cook 5–6 minutes until deep golden crust forms.

Flip once.

Lower heat to medium-low.

Add herbs (optional) and spoon melted fat over chicken for 2–4 minutes.
Cook until internal temp reaches 160–165°F.
Step 4 — REST (Most Important)
Let rest 5–7 minutes before cutting.
This step alone can double juiciness.
