Why Florida honey is different

Honey takes on the character of the flowers it comes from. Florida's blossoms grow nowhere else in such abundance, so its honeys taste like nowhere else.

  • A bloom for every season

A subtropical climate keeps nectar flowing through most of the year, so each harvest can be taken while a single blossom prevails. The result is honey of one flower and one season, never a blend.

  • A favorite of America's beekeepers

Florida consistently ranks among the nation's leading honey-producing states, and beekeepers from across the country bring their hives here for the winter bloom.

  • Flavors that only grow here

Orange blossom honey is drawn from the state's historic citrus groves. Saw palmetto comes from a native palm of Florida's scrub and pine flatwoods. You won't find either anywhere else.

  • Raw and never heated

Never heated and never finely filtered, our honey keeps the aroma, texture and nuance it had in the comb. Mass-market honey is heated and filtered for shelf appearance, and loses much of both.

Sourced with care

Each varietal comes directly from a Florida beekeeper, one harvest at a time. We fill every jar ourselves in Miami, by hand and in small batches.

  1. Harvested by blossom. Each honey is taken while a single bloom prevails, so every varietal is true to its flower.
  2. Never heated. Nothing is cooked out and nothing is finely filtered away. The honey reaches you as it left the comb.
  3. Filled by hand. Small batches, poured into glass and labeled by varietal and harvest.

Questions

Why has my honey crystallized?

Crystallization is the natural mark of raw honey, and happens sooner in cooler rooms. The honey is unchanged. To return it to liquid, rest the closed jar in warm (never boiling) water and stir gently. Avoid the microwave, which damages its aroma.

How should I store it?

Tightly closed, at room temperature, out of direct sun. There's no need to refrigerate it; cold just makes it crystallize sooner. Stored well, honey keeps for a very long time.

What does "raw" mean?

Raw honey isn't heated or finely filtered after it comes out of the hive. Most supermarket honey is heated and filtered so it stays clear and pours the same way all year. Raw honey can look a little cloudy and will crystallize over time, which is normal.

Which varietal should I begin with?

For a light, floral honey, orange blossom. For depth, in the way of maple or dark chocolate, saw palmetto. Wildflower sits between them. The Florida Flight presents all three.

Can babies have honey?

No. Don't give honey of any kind, raw or processed, to children under 12 months old.

Where do you deliver?

Honey comes with your regular same-day delivery across Miami-Dade on orders placed by 2 PM.

Do you prepare corporate and event orders?

Yes, in any quantity, with handwritten cards on request. Write to johanna@ranchersmarket.co.
